I think it’s safe to say that come fall, pumpkin is the flavor of the season, and for good reasons. Not only is it delicious, but it’s jam-packed with healthy goodness too. Aside from being loaded with vitamins A and C, pumpkin also contains a lot of potassium, which is great fuel after a workout to help replenish lost electrolytes. But the health benefits don’t stop there, pumpkin is also loaded with beta-carotene which is said to help prevent cancer, and promote healthy skin.
But I digress, as I don’t think pumpkin needs much of an introduction this time of year. And while I could eat it anytime; I certainly enjoy more of it during the fall and winter months. I mean let’s face it, pumpkin everything doesn’t seem to need much justification, and you can find it just about everywhere, in just about everything. Including many recipes I whip up including smoothies, muffins and of course, waffles! Because if you’ve been following me long enough here or on social media, then you know experimenting and creating new waffle recipes are one of my favorite specialties.
Often times I make a recipe and continue to change it up just to see what works and taste best. The majority of the time I aim to use whole organic foods and the healthiest ingredients possible, especially when it comes to prepping meals that I’m cooking to last the week. Both my husband and daughter are big fans of my waffles, and my pumpkin oat bran recipe is definitely a fall favorite in my house. They are without a doubt healthy, they very easy to make and for my family of three, the batch lasts us through the week. I love that they’re flourless, I feel 100% good about feeding these to my family and I’m excited to share the recipe with all of you!
- • 2 cups of oatbran (I use Bob's Red Mill Gluten-free)
- • 2 cups of unsweetened coconut milk
- • 1 can of pumpkin puree
- • 2 tsp of pumpkin pie spice
- • 1 tbsp vanilla extract
- • 1 tsp baking powder
- • 2 eggs (I use egg whites)
- • Cooking Spray (I use organic coconut oil spray)
- • 100% pure maple syrup (optional)
- In a mixing bowl, stir all ingredients until well mixed
- Spray waffle iron with cooking spray
- I use about 3 medium sized spoonfuls of batter for each waffle
- Cook each waffle until firm, about 3-5 minutes each depending on size
- Serve with maple syrup - although they're good plain too!
- Please note that these waffles are very moist, so they can be a little tricky to remove from the waffle iron. I have found the best way to do so is by gently lifting the edges with a fork and sliding a spatula underneath to remove it completely without it breaking apart.
