In the crazy busy world of motherhood, career and life in general, I’ve come to really appreciate taking a day or two out of the week to prep meals, snacks and juice. While some days I have extra time on my hands, other days I’m running around like a lunatic wondering if I’ll fit everything in on my agenda and schedule.
The days I have extra time have truly become my best friend. Slowly but surely I’ve started to find a better balance, and I make an effort to have things done and ready to go for the days I simply don’t have time to cook, do chores or run errands. This goes for meals, a clean house, laundry etc.
The beginning of last summer I found a recipe for energy bites. To be honest, I can’t even remember what the original recipe called for, or where I found it. I just remember making it, and altering it until it was a recipe that fit both my taste buds and caloric needs. These tasty little treats have become a life saver on days I’m running out the door to teach a class and simply need a quick snack to hold me over until my next meal.
A running friend of mine, and 15 time marathoner, recently asked via Facebook post for a good recipe for energy bars using both peanut butter and coconut oil. Score! Because I have the perfect recipe, and it’s not only ridiculously quick and easy to make, but it’s delicious and jam-packed with healthy ingredients and superfoods such as oats and peanut butter. I promised to share my recipe, so here it is! You’re welcome 😉
- 1 cup dry rolled Oats
- 2 tbsp Flax Chia Blend
- 1/2 cup all natural creamy peanut butter
- 1/3 cup 100% maple syrup
- 1 tbsp organic coconut oil melted
- 2 tbsp vanilla extract
- 1/2 cup mini chocolate chips
- Place all ingredients in a mixing bowl and stir until well mixed
- Mold into balls or bars
- Refrigerate at least one hour until firm
- Honey can be substituted for maple syrup
