Since day one, my daughter has always been on the higher end of the spectrum when it comes to weight and height. At 17 months I have people asking me if she’s two. Nope! She’s just big and healthy. She’s been a great eater from the start and rarely turns down a meal. But with that said, as she gets a little older, she is starting to develop a like and dislike for certain foods. She loves things like yogurt, bananas, berries and sweet potatoes, but give her peppers or spinach and it’s not usually her favorite. Often times I have to get creative in how I get healthy veggies into her. Whether I add these things into a homemade chili or tomato sauce or sneak them into a smoothie, I’m always determined to make sure she is eating a well-balanced and healthy diet.
Smoothies are definitely one of my absolute favorite ways to enjoy a healthy snack or sometimes even in place of a meal, especially during the hot summer months. I’m also in love with experimenting in my kitchen and being innovative. This past month I’ve come up with a few new recipes that both my daughter and I are loving. In fact, even my husband who isn’t much of a smoothie guy (he typically prefers green juice) is loving them. I thought I’d share my new favorite recipe for a green smoothie and hope that you and your family, and maybe even your kids like it as much as we do.
- 1 cup of raw organic spinach
- 1 cup of raw organic kale
- 1 small frozen banana
- 1 1/2 cups of coconut water
- 3/4 cup of fresh pineapple
- 1 scoop of organic wheat grass
- A few ice cubes
- Toss all ingredients into your blender and mix until smooth.
I made this smoothie last week, and I split it up between me and my daughter. She absolutely loved it, and she drank half of hers the day I made it and finished the rest the next day. In fact, she loved it so much she even asked for more. So while I may not always be able to get her to eat her green leafy veggies, God willing I seem to always find success in getting her to drink them! Whatever works, right?! 🙂
