I first discovered Popchips several years ago after seeing Jillian Michael’s, America’s favorite hardcore personal trainer, advertise them as a healthy potato chip. I decided to give them a try and it was love at first taste. They’ve ranked one of my favorite salty snacks for a couple of years, so when I was asked to do a review it was an easy, “hell yes!” because I already knew I loved them. You can only imagine my excitement when a big box filled with a variety of flavors showed up on my doorsteps. Snacks for days kids!
There’s a lot to love about Popchips. Aside from being flavorful and delicious, they have no trans fats, no artificial sweeteners and are neither baked or fried, but rather heated in a pressurized chamber to pop them, hence the name “Popchips.” This cooking method keeps the same savory spud taste but removes the grease and unhealthy ingredients. You can choose from a variety of flavors including sea salt, barbeque, sea salt & vinegar, sour cream & onion, cheddar & sour cream, salt & pepper and sweet potato. They also have veggie flavored and tortilla Popchips available. I think the sea salt are my favorite so far; although, I have to admit that I haven’t found a single flavor I haven’t liked yet.
Personally I think Popchips are a great guilt-free snack that always seem to satisfy my salty crunchy cravings. It’s love – without the handles! - Wedge Salad
- • 1 head of butter lettuce, cut into 4 quarters
- • 1 cup sundried tomatoes, julienned
- • 1 avocado, sliced
- Vinaigrette Dressing
- • ½ cup rice vinegar
- • 1 cup extra virgin olive oil
- • 1 tbsp whole grain mustard
- • 1 garlic clove, minced
- • ½ shallot, minced
- • Kosher salt to taste
- • White pepper, to taste
- • 1 cup sea salt and vinegar popchips, crushed
- Add all of the ingredients (except for the extra virgin olive oil) into the blended, slowly add the oil so the vinaigrette emulsifies.
- Season with the salt and pepper
- To build your wedges, place the lettuce on a platter and drizzle on the vinaigrette, add as much as you like.
- Add the tomatoes and avocado on top of each wedge and you are ready to serve
