I’ve always had a major sweet tooth and I absolutely love dessert. Chocolate, ice cream, smore’s, you name it, if it’s sugary and decadent, then chances are I probably love it. And while I occasionally indulge on good old fashioned sweets, I try to keep my diet as healthy and nutritious as possible.
One of my absolutely favorite guilty pleasures is chocolate chip cookie dough. Forget the cookie, kids, because in my opinion, the raw batter is where it’s at. It’s creamy, it’s sweet and I could probably eat an entire batch in one sitting if I really wanted to. But let’s be honest, not only is cookie dough loaded with fat,sugar and calories, but it’s also not the best idea to consume anything containing raw eggs. I’ve seen recipes here and there for cookie dough made with chickpeas, and for a while I thought to myself, “That can’t taste good!” Don’t get me wrong, I love me some garbanzo beans, but in a dessert recipe?!
A few months ago, while having a major cookie dough craving, I decided to experiment with the one can of chickpeas I had in the house and a bunch of ingredients. To my surprise, I was in LOVE with the recipe. I whipped up this easy and healthy recipe again today and decided it’s just too damn delicious not to share! So without further adieu, here’s my recipe for guilt free chocolate chip cookie dough bites.
- • 15 1/2 oz can of chickpeas
- • 1/2 cup all natural peanut butter
- • 2 tbsp vanilla extract
- • 1 tbsp maple syrup
- • 1/2 tsp water
- • 1/3 cup mini chocolate chips
- In a food processor or or blender, mix all ingredients together except for the chocolate chips.
- Once batter is smooth, transfer into a mixing bowl and add chocolate chips
- Refrigerator batter for 20-30 minutes
- Roll batter into bite size balls
- Serve
- Cover with saran wrap and keep refrigerated
