I always find a way to sneak chocolate into my daily diet, whether it’s mini chocolate chips in my Greek yogurt, or smothering my fruit in the sweet brown deliciousness, it’s an absolute staple and a necessity! During my pregnancy, I experimented all the time with healthy snacks and desserts, and found an easy recipe that I have continued to make – Chocolate Covered Peanut Butter Banana Sandwich Bites. In honor of hump day, I thought I’d share this savory sweet treat to help get you through the rest of your week 🙂
What you need:
• Bananas
• All natural peanut butter (I use Teddie’s)
• Chocolate (I do dark and mix up what kind I use)
• Toothpicks
• Wax paper
Directions:
• Cut banana(s) into slices
• Melt chocolate either in the microwave, or a saucepan on the stove
• Place a small amount of peanut butter on one side of your banana slices and make a sandwich
• Once your banana sandwiches are made, stick them with a toothpick
• Coat your sandwiches in the melted chocolate
• Place your chocolate covered peanut butter banana sandwiches on a plate covered with wax paper
• Refrigerate for about 30 minutes or until the chocolate is hardened
This is an easy, guilt free snack, and perfect if you’re on-the-go. I actually love popping a few right before or after a workout. They’re also a hit at any party or get together.
