I love recipes that are nutritious, simple to whip up and makes enough to last me through the week. Muffins are a great grab-and-go when I’m busy and need something quick, but let’s face it, they’re not the healthiest of choices. But after perusing Pinterest and experimenting in my kitchen, I came up with a muffin recipe that I not only consider to be healthy, but downright delicious. And who doesn’t love a good warm muffin straight out of the oven that’s good for you?! Especially one that has chocolate chips!

- • 3 mashed bananas (the more ripe the better)
- • 1 cup of unsweetened vanilla almond milk (you may need to add a little more depending on consistency)
- • 2 eggs
- • 1 tbsp baking powder
- • 2 cups rolled oats
- • 2 tbsp vanilla extract
- • 1/2 cup 100% pure maple syrup
- • 1/2 cup of mini Ghiradelli chocolate chips
- • 1/2 cup of Chia Seeds
- • 1 tbsp of melted coconut oil
- Preheat oven to 375 degrees
- Mix all ingredients except the chocolate chips together, and let sit while you prepare the muffin pans.
- Spray a muffin pan and/or liners with with non-stick spray.
- Stir the chocolate chips into the oatmeal batter.
- Divide batter into 18-20 muffin cups. They should be just about filled.
- Bake 20-30 minutes ( I did 20min), you’ll see the edges just starting to brown and they will be firm to the touch
- Let cool for 15-20 minutes
- Serve
- *Side note, if you don't use liners in your baking tray, be sure to spray even if it's nonstick. I forgot to spray the last few I had batter left for and they were much more difficult to remove than the first batch in which I did spray!
These muffins are ready for eatin’!
